The Chicken and Me

My mother-in-law graciously brought us a whole chicken. As far as I know, this is the first whole, raw chicken that has entered our home since we married. Anyway, my friend, Denise, gave me verbal instructions on how to prepare this bird last Friday. It is now Monday and I am hoping I am remembering everything--at least those things that are most important. I washed the chicken (just water, no soap) and then patted her with seasoning salt. I had sliced some onion (a miracle that I bought and touched an onion) and put those on the bottom of the pan and on the chicken also. I threw a few inside the larger cavity, too. I think Denise said to do that. I peppered and garlic salted her, also--on the outside. Too much? I'll know about 6 tonight.


Here's the chicken all ready (except for the water in the bottom of the pan which I hope to remember) to go into the oven. Into the oven she will go for about 2 hours at 350. Half way into the cooking, I'll add some carrots. I'll let you know the results.

Wow Heather, I'm proud of you! It makes me so happy to see you cooking and trying something new ;) My bird is still in the fridge, but I'm going to cook it on Wednesday (the last day that it's still good or needs to be frozen, haha). I found a recipe on the Food Network website that I'm trying... we'll see how it turns out. I've never roasted a whole chicken either. I guess the trick is to separate the skin from the chicken and flavor it under the skin, but still cook it with the skin on, it gives the bird good flavor that way.

I guess I could try it that way next time. Thanks for being proud. I thought you might be happy for me. I hope your bird turns out real tasty. Mike was proud of me for trying that, too. He's never cooked a full bird either. Hope you're having a good day.
